- Observation (CORRECTED DURING INSPECTION): High temperature dishwasher measured 68 degrees C at utensil surface during final rinse.
- Corrective Action(s): Do not use dishwasher for sanitizing of equipment/utensils until it is able to achieve a minimum of 71 degrees C at utensil surface. Ensure only single use disposable utensils/plates are used until such time. Any equipment/utensils that are to be washed must be sanitized in a 100-200 ppm chlorine (bleach) sanitizer solution, prepared as per instructions on manual warewashing poster (posted). Dishwasher may still be used for washing/rinsing prior to sanitizing step. Ensure that all equipment/utensils are sanitized again.
