      • The lighting level in the walk-in cooler was not adequate to see the left corner where meat was stored on shelves.-Ensure adequate lighting of the walk-in cooler to maintain cleanliness and sanitary operation of the area.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Measuring container with handle and plastics were stored in contact with the flour in containers at the storage area.-Store scoops with handles sticking out of the food for easy handling without contamination

    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • A metal tray with inserts of breading and batter were stored on top of a garbage can near the deep fryer. Do not use garbage cans as counters for food storage. Corrected during inspection.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Iodine test strips were unavailable upon request. Ensure that test strips for each sanitizer used onsite are available.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • A microplane zester and a stainless steel pitcher were stored in the basins of the hand wash sinks. . Keep hand sinks clear of equipment. Ensure that all hand wash stations are accessible at all times for hand washing.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • A deep fryer was noted near one of the prep coolers. It was not under the ventilation canopy and was full of oil/ready for operation. Ensure that all deep frying occurs under the ventilation canopy.
