      • Pot of soup was found in the cooler with internal temperature of 56 deg C.
      • It was cooked, left to cool in the pot for an hour then placed in the cooler.
      • Corrective Action(s):
      • Staff was instructed to follow proper cooling method (shallow pans/ice bath).
      • Ensure to review proper cooling procedure in the Food Safety Plan.
      • Regular cook was away and a temporary kitchen staff was working (Food Safe 1 certified).
      • Post proper cooking and cooling procedures in the kitchen area as reminders.
