    • F2.4 Are proper freezing and thawing procedures followed?
      • Observation(s): Corrected at time of inspection - Operator was thawing meat at room temperature. Meat was recently moved from freezer for preliminary thaw to be placed into cooler after some amount of time. Operator was informed this is not acceptable practice and to cool foods under either cold running water or in a cold holding unit at or below 4C.
      • F2.4B Potentially hazardous food must be thawed using appropriate equipment and/or approved methods.

    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): 1. Wiping cloth in continuous use was not stored in a bucket of sanitizing solution. Please ensure cloths in continuous use are stored in a sanitizing solution at appropriate concentration. Test strips should be used to verify the concentration. Note: - The deli slicer was observed to be quite dusty. Please ensure the slicer is covered with a material that is easy to clean and sanitize. Also prior to use, the slicer should be properly cleaned and sanitized.
      • F2.5C Wiping cloths must be maintained and stored in a sanitary manner.
    • F3.3 Are written food handling procedures (Food Safety Plan) current and available on site?
      • Observation(s): Discussed that food safety plan should be updated to include detailed cooling procedures. Please provide updated plan for review once completed.
