- Observation: Non food-grade garbage bags were still used to cover foods within the basement walk-in cooler.
- Corrective Action: Use food-grade covers/containers for food storage. Operator has stated that these are the last of the black garbage bags to be used. Food-grade bags have been purchased and are to be used in the future.
- 304 - Premises not free of pests [s. 26(a)]
- Observation: Mouse droppings present in the basement storage area where freezers are located.
- Corrective Action: Continue to monitor for pest activity, reorganization of the basement space, and perform regular cleaning of the area as necessary.

- 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
- Observation: (CORRECTED DURING INSPECTION) Food items in insert shelf for prep cooler opposite cook line were at a slightly elevated temperature (7-8 C).
- Corrective Action: Temperature was adjusted during inspection. Ensure that temperatures for refrigeration units are monitored on a daily basis by staff.

- Observation: Non food-grade bags used to cover pasta/food inside of basement walk-in fridge.
- Corrective Action: Remove non food-grade bags from food storage areas and cover with a food-grade material instead.

- Observation: (CORRECTED DURING INSPECTION) Head of lettuce stored directly on wire shelving in prep cooler opposite the cook line.
- Corrective Action: Outside layers of lettuce in contact with the shelving was peeled off, lettuce placed into an insert. Ensure that ready-to-eat food items are kept protected from contamination at all times.
- 304 - Premises not free of pests [s. 26(a)]
- Observation: Significant mouse activity (mouse droppings) observed inside of the basement dry storage area where flour, pasta machine is stored, on top of dish ware and by water heater unit. Operator states that dish ware in this area is not being used. Mouse droppings also observed in far shelving beside cook line and prep coolers.
- Corrective Action: Clean the indicated areas from mouse droppings and continue to monitor pest activity in these areas. Inform contracted pest company of the noted mouse activity and seal any openings where mice may be entering the kitchen and food storage areas.
- 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
- Observation: Significant clutter from unused equipment, furniture is present in the basement storage area. These can serve as harborage sites for pests, contributing to pest activity. Operators have stated that the basement storage areas are currently being reorganized and should be improved in the coming weeks.
- Corrective Action: Remove clutter from the basement areas.
