      • Observation: Vinegar spray solution being used to sanitize food contact surfaces. This is not an approved sanitizer and is not verified to be able to achieve the 5-log reduction in micro organisms that is required.
      • Corrective Action: Ensure that bleach solution is used to wipe down and sanitize food contact surfaces as well as for ware washing. Signage posted for ware washing in kitchen describes proper steps for preparation of sanitizing solution.
