      • 2) Store rice scoop in ice water solution. Rice scoop and container must be cleaned and sanitized every four hours, and ice water must be replaced.

      • Observation (CORRECTED DURING INSPECTION): 1) Bucket of bleach solution measured 0 ppm chlorine at the front. THIS IS A REPEAT VIOLATION.
      • 2) Knife sharpening stones observed to be stored in stagnant water at time of inspection. Measured 22 deg C.
      • Corrective Action(s): 1) Staff made a bleach solution measuring 100 ppm chlorine. Ensure a bucket of bleach solution or spray is always available while in operation.
      • 2) Discontinue practice of storing the sharpening stones in stagnant water as it promotes bacterial growth. Store stones in a dry and clean area.

      • Observation (CORRECTED DURING INSPECTION): 1. Surface cleaning sanitizer not available at the time of inspection
      • 2. When inquired, operator explained inappropriate manual dishwashing methods (bleach water-> wash -> rinse). Sanitizing compartment had 100 ppm of chlorine residual at the time of inspection
      • Corrective Action(s): 1. Required operator to make a sanitizer bucket to hold 100-200ppm of bleach and have cleaning towels/cloths in the sanitizer when not in use. Ensure to replace sanitizer often.
      • 2. Educated the proper methods: Wash-> rinse-> sanitize then air dry.

      • Observation (CORRECTED DURING INSPECTION): Observed newspaper being used in a container to hold flat grill scraper, for soaking up grease
      • Corrective Action(s): Required operator to remove newspaper and use paper towel instead as newspaper contains unwanted chemicals not suitable for food contact surfaces. Required to replace towels frequently.

      • Observation (CORRECTED DURING INSPECTION): 1. No surface sanitizer prepared. Wiping cloths stored on counters.
      • 2. Person in charge unable to describe proper manual warewashing method. Soap, bleach, and food debris present in third compartment where it was stated that utensils are sanitized. Person in charge stated utensils are rinsed after sanitizing.
      • Corrective Action(s): 1. Surface sanitizer prepared at 100 ppm chlorine. Please ensure that surface sanitizer is available at all times. Wiping cloths are to be stored in sanitizer.
      • 2. Three compartment sink was set up for manual warewashing at time of inspection with bleach sanitizer at 100 ppm. Please ensure that after utensils are washed and rinsed, they are fully immersed in sanitizing solution (e.g. bleach solution at 100 to 200 ppm) for at least 2 minutes. Allow to air dry after sanitizing.
