      • Commercial sanitizer final rinse temperature reached 65 degrees C (required to reach 71 degrees C at plate).Repair the sanitizer to be able to meet the final rinse temperature. In the meantime, the program should use single use plates and utensils OR wash dishes in dishwasher and then sanitize dishes in bleach solution (100 ppm) OR use two compartment for dishwashing of serving dishes and dishes. Strongly recommend to use a waterproof thermometer (NSF) min/max to check temperature of high temperature sanitizer regularly.
