- Repair dishwasher to ensure it is capable of measuring 71°C at the plate level at all times. Use three compartment sink method while waiting for repair.

- Three compartment sink quats sanitizer dispenser is dispensing 0ppm quats. Observed air bubble in the dispenser line. 0ppm quats available for warewashing.
- Manager brought in a new bottle of quats sanitizer and manually diluted a sanitizer solution for warewashing in three compartment sink (measured 200ppm). Use a manually diluted 200-400ppm quats solution for warewashing until dispenser can be repaired. Use test strips to confirm concentration.

- Repair the sanitizer dispenser. Use manually diluted 200-400ppm quats sanitizer for warewashing while waiting for repair. Comments Routine inspection conducted today. All coolers measured 4°C or below. All freezers measured -18°C or below. Temperature logs up to date. Test strips available onsite. No signs of pest activity. Facility is very clean. Quats surface sanitizer spray bottle measured 200ppm.
