- Improper manual dishwashing procedures were in place - no sanitizing step was occurring.The following 2 compartment sink method must be followed:1st sink: wash items with warm water and detergent. Rinse dishes with warm water.2nd sink: fill sink with warm water and sanitizer (200 ppm QUATs). Fully immerse items in this solution for at least 2 minutes.Remove to air dry.

- QUAT test strips were not available. Owner purchased them online during the inspection. Ensure sanitizer spray bottles and sanitizing step for dishwashing measures at 200 ppm QUATs.
