      • Observation (CORRECTED DURING INSPECTION): Chicken in one of the warmers was at 33 degC. Staff mentioned it was taken from the cooler and placed in the warmer directly for reheating. This is not acceptable. A warmer is meant to keep hot foods hot; it's not to be used as a stove to reheat meat.
      • Corrective Action(s): Meats must be reheated in the microwave to 74 degC before placed in a preheated warmer as discussed. Reheat the meat in the microwave.
