- The dishwasher is not being tested. - Ensure to test the dishwasher at least once everyday and maintain a record.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- The shelves in the dry storage area were lined with cardboard. - Ensure to remove the cardboard, and line shelves with something that is smooth, easily cleanable and non-absorbent to moisture.
- 23. Is the facility maintained in a clean and sanitary condition?
- 1) The ventilation canopy had grease build up.2) White freezer opposite cook line near prep coolers had food stains. 3) Seren wrap machine had significant dust and debris build up. 4) Oven wall had significant grease and food debris build up. - Clean the aforementioned areas.

- There was a build up of debris in the following areas:- One shelf where tortilla chips are stored by the dishwasher.

- Staff was diluting the quat sanitizer with water before placing it in utensil storage areas and sanitizer bucket. Sanitizer measured 0ppm. Do not dilute sanitizer as it is calibrated at the dispenser to the appropriate concentration.

- A baking pan with fries on top of it was placed on the garbage bin. Do not use the garbage bin for food storage.

- The iodine in the glasswasher measured 0ppm. CDI.

- There was a build up of debris in the following areas:- dry storage bins.- One shelf where tortilla chips are stored by the dishwasher. - Dishwasher racks.- There was glass in the beer glass cooler. Ensure these areas are cleaned.
