    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): 1. Three-compartment dishwashing method not used. The sanitizing step was not conducted. No food contact surface sanitizer observed in the third sink compartment.
      • 2. No food contact surface sanitizer observed in the back kitchen. Staff did not use food contact surface sanitizer to wipe the prep tables.
      • Corrective Action(s): 1. Operator prepared a sanitizer solution. Food contact surface sanitizer in the third compartment was measured at 200 ppm chlorine. Ensure all dishes are:
      • Step 1 - Washed with detergent
      • Step 2 - Rinsed with water and
      • Step 3 - Sanitized with chlorine at 100-200 ppm
      • 2. A spray bottle with 200 ppm QUATs was brought to the back kitchen. Ensure all food contact surfaces are sanitized appropriately.

    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation (CORRECTED DURING INSPECTION): Raw white beef tripe observed to be on top of ready-to-eat produce bag.
      • Corrective Action(s): Move raw meat product so that it is not on top of ready-to-eat food. Ensure all raw meat products are stored at the lowest level in the cooler/freezer.

      • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation (CORRECTED DURING INSPECTION): Back kitchen door propped open with a broom.
      • Corrective Action(s): Close the back door. Do not prop the door open. Install a door screen if needed.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: 1. Grease accumulation on the floor under and behind the deep fryer.
      • 2. Spillage of soup in the double door freezers.
      • Corrective Action(s): 1. Clean kitchen floor.
      • 2. Clean the spillage in the freezers.
