- Observation (CORRECTED DURING INSPECTION): 1. Three-compartment dishwashing method not used. The sanitizing step was not conducted. No food contact surface sanitizer observed in the third sink compartment.
- 2. No food contact surface sanitizer observed in the back kitchen. Staff did not use food contact surface sanitizer to wipe the prep tables.
- Corrective Action(s): 1. Operator prepared a sanitizer solution. Food contact surface sanitizer in the third compartment was measured at 200 ppm chlorine. Ensure all dishes are:
- Step 1 - Washed with detergent
- Step 2 - Rinsed with water and
- Step 3 - Sanitized with chlorine at 100-200 ppm
- 2. A spray bottle with 200 ppm QUATs was brought to the back kitchen. Ensure all food contact surfaces are sanitized appropriately.
