- Observation (CORRECTED DURING INSPECTION): 1 door prep cooler - bottom shelf 6 C, large food bin stored on upper shelf obstructing adequate air flow inside cooler. Upper shelf and top food inserts 3-4 C.
- Corrective Action(s): Manager re-arranged product inside cooler and replaced large bin with a smaller food container.
- Ensure air flow is encouraged by not overstocking shelves or using oversized containers within the small cooler unit.

- Sanitizer solutions were replaced during inspection.

- Observation (CORRECTED DURING INSPECTION): Staff were not following the proper 3 compartment warewashing procedure during the inspection
- Corrective Action(s): Retrain staff on proper 3 comp warewashing PROCEDURES. Wash with detergent and warm water, then rinse with warm water, then rinse with warm water, then submerge in sanitizer (200 ppm QUATs) for 1 minute, and allow dishes to air dry.

- Observation (CORRECTED DURING INSPECTION): Automatic handsink at back of kitchen, and next to chicken hot holding units did not dispense warm water.
