      • Corrective Action: Maintain a food safety plan in the facility.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) No chlorine was detected in dish washing machine water.
      • Corrective Action: Maintain a chlorine concentration of at least 50 ppm in dish washing machine water. The existing chorine solution is very old and may have lost its strength. Replace it with new solution and maintain at least 50 ppm chlorine in dish washing water. If dishes must be washed before adequate chlorine concentrations are obtained, use the manual 3-step method.
    • 314 - Operator has not provided acceptable written sanitation procedures [s. 24]
      • Observation: There is no samitation plan in the facility.
      • Corrective Action: Maintain a sanitation plan in the facility.
