- A bag of sugar was stored directly on the floor in the dry storage room. Ensure that all food is stored at least 6 inches off the floor.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Shredded pork was stored at 14C (external temperature) in an ice bath. Ensure that all high-risk food is stored at 4C or less when cold holding. Use a proper ice bath that surrounds the food container to at least the level of the food. Corrected during inspection.

- Chlorine test strips were unavailable upon request. Purchase chlorine test strips. Ensure that test strips for each type of sanitizer used onsite are available.

- Accumulation of spilled food was noted on top of food containers and on the floor in the dry storage room. Clean this area. Ensure that all areas are maintained in a clean and sanitary manner.

- The designated hand sink in the bar area was blocked by a metal tray used for ice. The designated hand sink must be available at all times and should not be used for any other purposes other than performing hand hygiene. The operator removed the metal tray from the hand sink at the time of the inspection.

- Food permit is not posted in a place that is easily seen by the public. Print and post the current food permit.

- There was no paper towel dispenser at the bar hand sink. There was no soap dispenser at the kitchen hand wash sink. Ensure that all hand wash stations are equipped with soap and single-use paper towels that are easily accessible and in dispensers.

- Numerous small flies were noted in the bar and in the kitchen dishwashing area.Actions required:1. Contact a certified pest control company to help control the flies. 2. Complete all recommendations/actions required by the pest control technician (such as cleaning).3. Provide a copy of the pest control report to the district Public Health Inspector.4. Retain copies of the pest control reports.
