- Observation(s): • Chlorine test strips must be available to monitor for the sanitizer concentrations. Operator is to buy sanitizer test strips to monitor the sanitizer concentration following mixing of the solution in the spray bottle. • Back storage room cooler was observed at -28C and the thermometer placed inside the cooler display -8C. The thermometers inside the cooler units containing the ice cream and stored popsicles also displayed incorrect temperatures. Ensure all thermometers are accurate within 1C to monitor for safe temperatures. As discussed with operator, thermometers must be replaced.
