- Observation(s): - Dishwasher is not operational. Small prep cooler is not operational. Walk in freezer is not operational (but may not be needed for routine operation). - Cover missing from one light fixture in cooking area. Light bulbs are burned out in a different light fixture in the cooking area. - Cutting board in bar area shows excessive staining. Should be resurfaced or replaced.

- Observation(s): Test strips not available for each chemical sanitizer on the premise. Test strips are required to monitor processes and ensure correct chemical concentration.
- F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
- F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
- Observation(s): F2.5A: Observed damaged wooden mallet being used to break ice. This equipment is difficult to properly clean and sanitize, and could possibly contaminate the ice if it continued to chip and deteriorate. Operator discarded the utensil immediately (CDI). F2.5C: Observed soiled/dirty wiping cloth on counter. These cloths can harbour bacteria, and are not sanitizing the tables / food prep surfaces that are being "cleaned"/wiped. Cloths need to be stored in sanitizer solution. F2.5K: Observed bowls being used as scoops for dry product. Scoops must have a handle, and the use of the scoop should prevent cross-contamination from employee hands. Please use a more appropriate utensil as a scoop, and ideally store this outside of the dry product containers.
