      • Step 1:
      • 60 deg C to 20 deg C within 2 hours using methods such as your ice wand or wide shallow pans (1 to 3" layer thickness)

      • 20 deg C to 4 deg C within 4 hours (transfer to the fridge)
      • Do not place any foods hotter than 20 deg c in the fridge otherwise all the items will warm within
