      • Corrective Action(s): Recook the lechun >74 deg C then place in the hot holder
      • Always be mindful of any potentially hazardous foods at room temperature

      • Observation (CORRECTED DURING INSPECTION): AGAIN observed four whole cooked tilapias stored at room temperature 35-40 deg C. Operator indicates it was cooked less than an hour ago and worker forgot to put it in the fridge -supposed to be cook-to-order as per operator. The display case hot holder is not working and at room temperature only used for display of the non-PHF desserts.
      • NOTE: this critical infraction was cited in the February 1, 2024 routine inspection
      • Corrective Action(s): Operator placed the tilapias in the fridge.
      • Correction Order issued -final warning, next offense will be ticketing
      • Do not store hot held foods below 60 deg C

      • Observation (CORRECTED DURING INSPECTION): Two whole cooked tilapias were stacked atop each other at the front counter hot holders -the top one was only at 39 deg C -just cooked within the last hour as per operator
      • Corrective Action(s): Recook the top tilapia and place it in your other glass encased hot holder -do not not overstack hot held foods above the container rim (one whole tilapia only at a time).

      • Corrective Action(s): Keep the foods covered -place it in display cases not open to the public self-serve either
      • -Remember ice is a food and must be protected from contamination -place in washable containers or ziplock bags
      • -DO NOT reuse disposable gloves once used! Use washable bulk scoopers not disposable containers for bulk foods

      • -Protect your foods! When cooling foods cover it with a lid or food wrap leaving a small gap for the steam to release

      • Observation: - Significant amount of mouse droppings noted on floor under cabinet where steam table is located.
      • Corrective Action(s): - Clean up all droppings and disinfect area [Corrected during inspecton]
      • - Continue to monitor this area daily, cleaning up any additional droppings immediately if noted.
      • - Maintain a high level of sanitation and keep floor clear to facilitate cleaning and monitoring
      • - Store all dry goods in pest proof containers.
      • - Maintain contract for pest control services and follow all instructions of Pest Control Technician regarding cleaning and removing/blocking any entrance points.
      • Pest control contract in place with monthly service. Most recent service report (13-Nov-2019) was viewed at time of the inspection. Report indicated activity in the ceiling and that traps had been set. Frequency of service may need to be increased to twice monthly if activity does not decrease.

      • Corrective Action(s): All foods moved to walk-in cooler at the time of inspection. Repair cooler so that it is able to achieve and maintain 4C/40F.
