- Observation (CORRECTED DURING INSPECTION): High temperature dishwasher not achieving the minimum required temperature of 71'C. 200ppm chlorine solution was prepared in one of the 3 compartment sink at this time. All dishware washed through the dishwasher in the past 2 days must be soaked in this solution for at least 30 seconds and air dried.
- Corrective Action(s): Ensure to have the dishwasher repaired so that the final rinse temperature reaches 71'C at the plate level and 82'C at the manifold. Until then all dishwashing must be done manually at the 3 compartment sink.

- Observation (CORRECTED DURING INSPECTION): Handwashing station in the back prep room was missing liquid soap and blocked by a garbage bin. Operator was advised to refill the soap dispenser and move the garbage bin away at this time.
- Corrective Action(s): As discussed at this time, this is the only handwashing sink available in the back prep room and must be free of obstruction at all times. All handwashing stations must be adequately supplied with liquid soap, paper towels, and hot/cold running water at all times.

- Observation (CORRECTED DURING INSPECTION): Surface sanitizer was not available at the time of the inpsection. Staff had provided a bottle of 'cleaner' instead. Operator went out and brought in a bottle of bleach at the time of the inspection. 200ppm chlorine solution was prepared in a labelled spray bottle at this time. Staff was advised to have all food prep surfaces sanitized using the newly prepared sanitizer.
- Corrective Action(s): Ensure to have 200ppm chlorine solution available at all times. All food prep surfaces must be sanitized before initiating any food prep in the morning, as well as during the operation- after each possible contamination and every 2 hours.
