- Cooked chicken stored on the lowest shelf of the hot-holding display case was probed at an internal temperature of 55.6C. Chicken had been prepared less than two hours prior. Chicken was moved into alternate suitable hot-holding units during inspection. Ensure that hot-holding units are routinely and accurately monitored to ensure food is stored at or above 60C.
