      • Observation(s): Raw food (carcasses) stored above ready to eat food in walk in cooler.

      • Observation(s): As discussed the smokehouse will be moved closer to the main building, a cement pad will be poured for flooring, a tin lean-to will be created and a screen will be used to enclose the smokehouse to prevent/reduce contamination.
      • 1 Observation, Low Severity of Consequences : Smokehouse is not located in an area that minimizes exposure of food to potential sources of contamination.
    • 12.2 - Are the premises maintained in sanitary conditions?
      • Observation(s): "Floor carpets" in hanging cooler were heavily soiled and are required to be changed to ensure facility is in clean and sanitary condition. Operator identified this would be done immediately.
      • 1 Observation, Low Severity of Consequences : The premises, equipment and utensils must be maintained in sanitary condition.
