      • 1.Some drawers and shelves have buildup of some dust and food debris.2.A knife holder on the side of a food prep counter had heavy buildup of grease and grime and food spatter is noted on the side the food prep counter where the knives make contact with this counter wall. The knife holder is broken as well on one corner.1.Ensure that drawers are cleaned and sanitized.2.The knife holder and the counter wall behind it must be cleaned and sanitized.
