      • Several boxes of butter and multiple stacks of egg cartons were observed stored directly on the floor of the walk-in cooler. In addition, accumulated food debris and spills were present on the floor surface.Food items must be stored off the floor on clean, durable shelving or racks to protect them from contamination and to facilitate effective cleaning and sanitation of the area.

      • Items not related to food storage, including shelving materials, were observed stored in the walk-in freezer. Walk-in coolers and freezers must be used for the storage of food and food-related items only. Remove all non-food-related items and maintain the area in a manner that prevents contamination and facilitates effective cleaning and organization.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The temperature of the walk-in freezer was noted to be -16 degrees C.Ensure the temperature is less than -18 degrees C.

      • The floors of both the walk-in cooler and walk-in freezer were observed to be dirty and in an insanitary condition. Accumulated food debris and spills were present on the floor surfaces, resulting in a sticky residue that caused footwear to adhere to the floor while walking. Floors must be maintained in a clean and sanitary condition and cleaned at a frequency sufficient to prevent the accumulation of food debris, residues, and other contaminants.
