    • 29(2)(a) - INADEQUATE MAINTENANCE, CLEANING & SANITATION PROGRAM.
      • Grease trap at deli two compartment sink to be inspected and properly sealed to meet Plumbing Code & any local authority requirements. Enhanced cleaning required of bakery to remove sources for pests and clean under equipment (See PCO reports).

    • 29(2)(a) - INADEQUATE MAINTENANCE, CLEANING & SANITATION PROGRAM.
      • Repair or replace thermometer in large open faced milk cooler. Grease trap at deli two compartment sink to be inspected and properly sealed to meet Plumbing Code. Expired disinfectant at janitors sink in back shop to be removed from premises. Replenish supply if in use. Enhanced cleaning required of bakery to remove sources for pests and clean under equipment. Perform cleaning and product retrieval for dispositions, of pop and health food areas. Improve labelling on marinades (allergens etc.)
    • 33(1) - OPERATOR FAILING TO CONTROL TEMPERATURE OF FOOD SO FOOD DOES NOT DETERIORATE OR BECOME INEDIBLE OR UNSAFE.
      • Dairy specials end case one shelf not holding <= 4C in foods. Recently placed potentially hazardous foods (PHF's) to be immediately relocated. Egg case some small areas not holding <= 4c in unit. Top shelf (cottage cheese area) not holding <=4C on other end. Have units serviced / adjusted and holding <= 4C in all areas before reuse. Have all vents cleaned and fans checked to ensure proper function. Operator to investigate further, relocate PHF's as necessary and manage food safety.
