      • The rice paddle was stored in a cup of stagnant room temperature water. Please store the rice paddle in an ice bath and change the water/ice frequently to reduce the risk of bacterial growth and contamination of the rice when scooping.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink in the kitchen was blocked by a garbage can at the time of the inspection. the garbage can was moved by the operator at the time of the inspection. Please ensure the hand sink is always free from obstruction and is accessible to food handlers at all times to facilitate proper and frequent hand washing.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The roll of paper towel for the hand sink was not in a paper towel dispenser. Please install a proper paper towel dispenser to store the paper towel in and protect it from contamination.

    • 09. Are chemicals stored and handled in a safe manner?
      • The chlorine sanitizer spray bottle was unlabeled. Please ensure all chemicals are properly labeled such that the contents can be identified and properly used.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Currently the kitchen has a one-compartment sink, a high-temperature sanitizing dishwasher, and a hand sink. This is insufficient as a two-compartment sink is required as a back-up for the dishwasher. Please install a 2-compartment sink or add an additional one-compartment sink directly next to the current one-compartment sink. Water must be accessible to both compartments and drain plugs must be available for both.
