      • Corrective Action(s): Place fly traps to reduce flies from contaminating foods. Ensure to place traps away from any food prep areas.

      • Observation: Gaps in the corner of the back door in the walk-in cooler observed.
      • Corrective Action(s): Ensure to close off the gaps to prevent pest entry.

    • 101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
      • Observation (CORRECTED DURING INSPECTION): - Addition of smoker outside of premise in back patio area without prior health consultation/approval. Smoker is covered and fully enclosed (when large access door is closed). When smoker is in operation the access door remains open and smoker doors are closed (protecting food from contamination during cooking process).
      • - Operator confirmed that meat is first smoked outside then brought inside to kitchen for the remaining food processing steps outlined in the now approved FSP which includes a second cooking/reheating step. (see approved FSP for further detail).
      • - No objections at this time to use of the smoker in its current set up with current approved FSP.
      • Corrective Action(s): Ensure food safety plan is reviewed and followed by staff. Any future alterations/additions to premise must be approved prior to construction/addition/use.

      • 212 - Operator has not provided acceptable written food handling procedures [s. 23]
      • Observation (CORRECTED DURING INSPECTION): No approved Food Safety Plan in place for premise. Reviewed corrections to previously submitted versions of FSP with undersigned operator and all required corrections were made. Updated plan emailed and received by EHO during inspection.
      • Corrective Action(s): Review updated FSP with all kitchen staff prior to next operating date.
      • Violation Score: 3
      • 314 - Operator has not provided acceptable written sanitation procedures [s. 24]
      • Observation (CORRECTED DURING INSPECTION): No approved Saniation Plan (SP) in place for premise. Reviewed corrections to previously submitted versions of SP with undersigned operator and all required corrections were made. Updated plan emailed and received by EHO during inspection.
      • Corrective Action(s): Review updated SP with all kitchen staff prior to next operating date.
