- Observation(s): Observation: During inspection commercial dishwasher was not dispensing at least 50 ppm of chlorine during the rinse cycle. Corrective Action: Ensure that dishwasher is serviced so that at least 50 ppm of chlorine is dispensed during the rinse cycle for adequate sanitization of dishware.
