- Observation(s): 1. At the time of inspection 2 of the sanitizer buckets has a concentration less than 100 ppm Quat which is less than the 200 ppm minimum requirement. Sanitizer bucket solution concentration should be tested using test strips on site in an as needed basis instead of every 2 hrs and should maintain a concentration of at least 200 ppm Quat. Concentration not maintained at 200 ppm could lead to ineffective killing or inactivation of pathogens leading to potential cross contamination of food contact surfaces 2. An ice bucket was observed to be stored on top of the ice machine with the lid directly contacting the equipment leading to unsanitary condition. This is was corrected at the time of inspection. Unsanitary condition of the ice bucket could lead to cross contamination when being used on ice

Verify concentrations with test strips. Refresh solutions as needed. Dishwasher final sanitizing rinse reached at least 72C at the plate level at the time of inspection.
