      • 1. A sanitizer bucket had bleach mixed with soap. Do not mix soap with the bleach sanitizer. Sanitizer buckets should only contain 100ppm bleach solution.2. A bucket of bleach sanitizer was much too strong. Use test strips to confirm bleach sanitizer is made up at 100ppm.Test strips were available.

      • The High Temperature Dishwasher was measured to be operating at 64 degrees Celsius at the time of Inspection.Ensure that the Dishwasher is repaired in order to reach at least 71 degrees Celsius. This is required for proper sanitizing of Dishes.A new part is on order to fix the Dishwasher. 3 compartment manual dishwashing is in effect until the unit is repaired.
