    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • High risk food in the hot holding unit was measured at below 60C using a probe thermometer. Hot holding unit was at 44C. Food was reheated within the 2-hour period, and operator was educated on not placing the food in the unit until the temperature of the hot holding unit is above 60C.Ensure the temperature of hot held food is monitored every 2 hours.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • There was no sanitizer solution made available. Ensure there is an approved sanitizer in a bucket or spray bottle whenever in operation.
    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • - Staff member went from dishwashing to handling a container with food inside of it.- Staff member observed to answer/ handle cell phone and then put on gloves without handwashing. In both instances, staff was educated to wash their hands. Ensure staff are trained in proper handwashing and when to wash hands.
