- Observation(s): 1. NEW INFRACTION: The temperature of the meatballs and other foods in the hot holding unit (steam table) were 35° C (95° F). Also, the temperature of the water in the steam table was 35° C (95° F). Foods being hot held must be maintained at a food temperature of 60° C (140° F) or higher at all times. Correct the procedure with staff right away. 2. NOTE: Staff reported that they routinely had to turn off the steam table because the food was getting too hot. The steam table should be able to self-regulate the proper hot holding temperature(s) without staff having to turn the unit on and off. Check the steam table controls to ensure that the steam table is operating properly. 3. NOTE: Ensure that staff are properly reheating foods in the microwave prior to inserting into the steam table.
