    • F1.5 Has the operator taken steps to ensure employees are using adequate hygiene measures to prevent contamination of food?
      • Observation(s): One of the food handlers went to the walk in, and returned to the front service station ( meat slicing task). The worker donned a new pair of gloves but neglected to wash hands prior to donning the gloves- CDI One of the food handlers ( sandwich maker) was observed wearing multiple bracelets ( bangles on both wrists, when stacked together, the length of jewellery is approx 2 inches in length for each arm); the same worker was also observed wearing two rings on one of her hands-rings are not simple bands but ones with centre stones)
      • F1.5A Employees must wash their hands as often as necessary to prevent the contamination of food.
      • F1.5B Employees must exhibit cleanliness and good personal hygiene.
    • F2.4 Are proper freezing and thawing procedures followed?
      • Observation(s): Walk in freezer was maintaining an air temp of 10°F ( checked twice-at the start of the inspection and again at 14:00 hrs.)
      • F2.4A Potentially hazardous frozen food must be maintained at -18 °C (0 °F) or colder.

      • Observation(s): Walk in freezer does not have a working thermometer. Replace the broken thermometer
      • F2.1B A thermometer accurate within 1 °C must be available to monitor processes.

      • Observation(s): • Missing ceiling tiles observed above the shelves where cleaned utensils were stored. This is a potential point of entry for pests. Corrective action: • Ensure all ceiling panels are properly installed. Note: • No pest activity observed at time of inspection • Pest control company in place who is conducting routine inspections.
      • F2.2B The premises must be protected against entry of pests.
