- Observation(s): Several bags of garbage were observed inside the food premise by the back door. Employee stated the reason for accumulating garbage on premise was that it had been a busy day. Employee agreed to remove the garbage to its proper receptacle outside.

- 4 - Are proper refrigeration, freezing and thawing procedures followed?
- Observation(s): 1) Cut vegetables, sauces, and other potentially hazardous foods stored in inserts in the cooler up front were measured between 5-8C at the time of inspection. Deli meat that were covered with individual lids were measured at 4C. 2) Under counter cooler in the front area was measured at 15C. Small amounts of lettuce, cheese, and cooked meat noted in this cooler. Staff immediately transferred the potentially hazardous foods into the walk-in cooler that was operating below 4C. Thermometers observed to be available on site and temperature logs were maintained on a daily basis. Manager and staff informed to lower the thermostat of these coolers to ensure they are maintained at or below 4C.
