The wall on the corner of the hallway leading to the Tofu room is observed to be in disrepair and is no longer smooth and easy to clean. 1-2. Ensure that the indicated walls are repaired to be smooth, durable, resistant to moisture and easy to clean.

- Bleach/chlorine in a spray bottle was measured at 200ppm with bleach/chlorine test strips. Ensure that the bleach/chlorine sanitizer is maintained at 100ppm. The operator prepared a 100ppm bleach/chlorine sanitizer.

- Food safety plan / sanitation records are not available at the time of inspection. Please ensure that food safety records are maintained, updated and made available for inspection.
