    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Sanitizer pails were at 0ppm of chlorine at the time of inspection. Operator replaced solutions during inspection.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishwasher was equipped with detergent, however, there was 0ppm of chlorine at the dish level. Operator repaired unit during the inspection and concentration returned to 100ppm of chlorine. Two compartment sink had detergent and bleach available.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • New wooden shelves were installed in the kitchen, however, they were unprotected. Please ensure the boards are protected so that they are smooth, impervious to moisture, easy to clean and in good repair.

      • The front hand wash sink had a slow drain. Ensure the plumbing is repaired or replaced to allow for proper drainage.
