- There were several cucumbers stored underneath the two-compartment sink. Food must be stored in a manner that protects it from contamination. Refrain from storing food under the sink or plumbing components as water leaks may occur. The operator removed the cucumbers from under the sink at the time of the inspection.

- There was grease buildup in the filters of the ventilation canopy. All equipment must be maintained in a clean and sanitary manner and regularly cleaned to remove debris/build up. Thoroughly clean the filters of the ventilation canopy and ensure they are cleaned on a regular basis.

- Knives were stored in a solution of 100ppm of quats. The quats sanitizer solution must be maintained at 200ppm to effectively sanitize and properly store food utensils. Ensure the sanitizer solution is changed regularly as the concentration can decrease over time. The operator remade the sanitizer solution at the time of the solution and measured 200ppm.

- The bulk containers (disposable containers) for the fish powder and the cornstarch were heavily soiled with grime and food build up. Bulk supply containers must be maintained in a clean and sanitary manner. Please ensure the disposable containers are replaced regularly. The operator replaced the containers at the time of the inspection with clean containers.

- There was cucumber, carrot, and lettuce stored underneath the two-compartment sink. Food should not be stored near the drainage pipe as this can result in contamination of the food in the event of a leak. Store food in an area where it is protected from contamination. The operator removed the cucumbers, carrot, and lettuce at the time of the inspection.

- Plastic container without a handle was used as a scoop and stored inside the container of the rice bulk supply.Replace the plastic container with a scoop that has a handle and store scoops in a separate area or with the handle upright to avoid contamination of the food. The operator removed the plastic container from the bulk container at the time of the inspection.
