      • Weatherstripping was in disrepair. A gap was present.Please ensure weatherstripping is repaired so that it is pest proof.

      • Dishwasher was in disrepair.Chlorine levels were measured at 0ppm. Chemical line was adjusted and primed. A concentration of 100ppm was measured.In addition, detergent line was broken/disconnected from the feeder on machine. Detergent was dispensing into tray on top of machine.Operator was instructed to switch to manual three compartment dishwashing.Please ensure chemical dishwasher is repaired.

      • Chemical concentrations are not being monitored on a daily basis. Chemical concentrations must be checked on a daily basis to ensure appropriate sanitizing levels have been achieved.Ensure chemical concentrations are monitored and recorded daily.

      • Meat slicer is no longer being used. Debris was observed on slicer.Staff moved slicer from the prep area.

      • Cleaning is required inside and on-top of dishwasher. In addition, a build-up of debris and grease was noted on prep cooler drawers.Please ensure the indicated areas are cleaned.For prep cooler drawers, these are considered high touch surfaces. Please ensure they are cleaned and sanitized a minimum of every 4 hours.
