- The rice paddle was being stored in stagnant room temperature water. The rice paddle must be stored in an ice bath that is frequently replenished and replaced to reduce the risk of pathogen growth and cross-contamination of the rice. The water bath was dumped, and an ice bath was made for the rice paddle at the time of the inspection.

- June 12th, 2024: Multiple bamboo wok brushes were observed with both duct tape and elastic bands on the handles. This in an ongoing violation and must be immediately addressed. Duct tape and elastic bands are not a cleanable surface and must be removed. January 8th, 2024: The duct tape had been removed, but elastic bands, and cloths had been added to the handles. These items are also not cleanable. Please remove the elastics and cloths from the handles. Two bamboo wok brushes had duct tape on the handles. Please remove the duct tape as it is not a cleanable surface. Replace the brushes if they are in disrepair.

- January 8th, 2024: ongoing violationThe veneer on the cupboard doors located under the hand sink were loose and falling off. The cupboard doors were also falling off of the hinges. Please repair/replace the cupboard doors such that they are smooth, impervious to moisture, cleanable, and in good working condition.

- The walk-in cooler had an ambient air temperature of 5.6C-8.2C at the time of the inspection. The internal temperature of various food items was around 7.6C. The air temperature coming out of the condenser unit was below 4C. The temperature of the cooler was checked again approximately 20 min after the initial temperature check and the ambient air temperature was 5.2C. Please monitor the cooler temperature and ensure it is capable of maintaining a temperature of 4C or below.
