      • Improper reheating and hot holding of soups and curries observed. Temperatures measured to be 20°C for all three items. This is a repeat violation.
      • Ensure all hot foods are first reheated to 74°C on stove top before placing in hot holding unit. Foods must be hot-held at 60°C or higher in hot-holding unit at all times. Violation corrected at time of inspection by correctly re-heating foods on stove top to =74°C. Staff in kitchen educated on proper heating and reheating procedures.
    • Improper Construction / Maintenance of Establishment
      • Build-up of dust and debris observed beneath storage racks and hard to reach areas.
      • Clean all affected areas and keep up with facility sanitation. Comments Routine inspection conducted today. Hand washing stations equipped with hot/cold water, soap and paper towel. All coolers and freezers meet health temperature requirements. Temperature logs available on-site. Mechanical dishwasher measures chlorine sanitizer at 100 ppm. Surface sanitizers measured at 200 ppm quats. Food storage practices observed to be correct (all foods covered, raw meats separated). Ventilation hood above cook line free of grease / debris build-up. Ice machine is sanitary; scoop is separated. Pest control measures present. NOTES: Unidentified pipe observed in bar area above sinks. Pipe has black debris build-up. Staff informed pipe is not in use and insure of its purpose. Replace or remove pipe according to use in operations.
