      • Sanitizing solution in spray bottles measured 0ppm when tested with quat test strips.Ensure sanitizing solutions contain the required amount of chemical.Quat should measure 200ppm.No red buckets intended to hold quat sanitizer were in use at time of inspection.Use these buckets to hold sanitizer and ensure wiping rags are soaking in the solution when not being used.

      • Spray bottles for quat sanitizer were not labeled.Ensure all chemicals are labeled to indicate their contents.

      • No chlorine detected in dishwasher rinse water.Sanitizer line primed but still no residual was measured in rinse water.Tubes for rinse aid and sanitizer were backwards.Dishwasher technician contacted and arrived during inspection.Use chlorine test strips to check sanitizer concentration daily.
