Protecting food from contaminationHigher risk
This covers how food is stored, prepared and displayed: raw meat kept away from ready-to-eat food, food covered and stored off the floor, and nothing dripping or splashing into it. Cross-contamination from raw to cooked food is a direct route for salmonella and E. coli.

- Critical Food Not Protected From Contamination - Other Sources
- Observed a spray bottle of bleach sanitizer in the bakery area, label listed 1500 ppm and measured >200 ppm.
- Corrected on site, bottle was remade and measured 100 ppm. Check and record the bleach sanitizer daily (purchase chlorine test strips if necessary) so that it is maintained at 100 - 200 ppm at all times. Over 200 ppm the sanitizer is no longer 'no rinse' and the chlorine bleach will remain on the surface and can get onto the food if it were to contact the surface. 100 - 200 ppm bleach can be made up by adding 0.5 - 1 tsp (2.5 - 5 ml) of bleach to 1 litre of water.
- Food Not Protected - General
- Observed build up of food debris on the milk crates used to store the clean gelato buckets lids, and chocolate splatter on the containers and lids as well.
- Corrected on site, the crates and lids were cleaned and sanitized. Monitor and clean the milk crates as needed so the milk crates used for lid storage are kept clean. Protect the clean lids and crates during gelato making to avoid food splatter getting onto clean utensils and storage bins.
- Food Not Protected - General
- Observed uncovered cooked cooled risotto on pans in the bakery cooler.
- Corrected on site, the pans of risotto were covered. Cover foods once they have finished cooling, as unprotected exposure can result in dirt and debris getting onto the food.
- Food Not Protected - General
- The left door hinge for the basement ice machine was observed to have a rusted washer or another metal part underneath the screw.
- Replace the rusted part and clean and sanitize the rust off any other affected piece of the ice machine door hinge by May 27, 2026. Email the EHO a photo once complete.
