      • The concentration of the bleach sanitizer was 1000 ppm. The solution was diluted to 100 ppm. Please ensure the concentration of the bleach solution is 100ppm.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Several items in the refrigerator—including cut oranges, corn, and a sauce—were found to be moldy. All affected food was discarded.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • A chlorine test strip was not available. Obtain chlorine test strips and ensure they are used to verify the concentration of the bleach sanitizer.
    • 20. Do food handlers at the facility have adequate food safety training?
      • At least one person having care and control of this food establishment does not hold a certificate in food sanitation .
