    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • A single-compartment sink was installed which is insufficient for washing dishes and cooking equipment. At minimum, a 2-compartment sink with basins big enough to clean the largest piece of equipment must be installed.Detergent and an approved sanitizer must be available near the dishwashing sinks.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Soap and paper towel were not available for hand washing. The two-compartment sink can be used for hand washing as long as the sink is empty of dishes and foods but it must be stocked with liquid hand soap and paper towel.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • A commercial deep fryer has been installed but only a residential hood was put in above it. Deerp fryers produce a lot of heat and grease that must be ventilated and pose a fire hazard. A commercial ventilation hood and fire suppression system must be installed above the fryer. Please consult with the local fire inspectors to determine additional fire code requirements that might need to be met.
    • 26. Have plans for construction or alteration of this facility been submitted for approval?
      • Plans for the kitchen were not submitted for review. Plan reviews are important because they help ensure that kitchen designs meet the Food Regulation before installation.
