- Observation:Dirty wiping cloths were observed stored on the countertop between uses.Corrective Action Required:Ensure all wiping cloths in use are maintained in a clean condition and stored in a container with an appropriate sanitizing solution between uses to prevent contamination of food and food contact surfaces.

Use appropriate test strips to verify that sanitizer concentrations meet required standards at all times.

- Observation:Biofilm (slime) buildup was observed on the interior surfaces of the bar ice machine.Corrective Action Required:Immediately clean and sanitize the ice machine in accordance with the manufacturer’s instructions to remove all biofilm buildup. Maintain the ice machine in a clean and sanitary condition at all times to prevent contamination of ice.
