- Observation(s): • NEW: The deli display cooler is not maintaining proper food temperatures. The cooling coils in the cooler are heavily iced up, restricting proper cooling. The deli cooler requires defrosting. • NOTE: Staff report that the deli cooler is defrosted once a month; the cooler must be defrosted more frequently to prevent a heavy build up of ice on the cooling coils. • NOTE: A thermometer should be placed inside the deli cooler, at food level, to monitor the cooler temperature daily. If a temperature of 4° C or colder is not being maintained then staff must check the cooling coils to see if the cooler requires defrosting.
