     • Observation(s): NOTE: The walk-in cooler has not been functioning for the past 24 hours. Staff had relocated all dairy and most other perishable products to coolers that are operating. However, staff did not relocated all food items that were in the sandwich preparation locker in the walk-in cooler, or foods on top of the locker. All foods in and on top of the sandwich preparation locker that are marked "Keep Refrigerated" (or similar) must be discarded, and not used. Correct right away.
     • F1.2B Potentially hazardous foods must be stored or displayed at a temperature of 4 °C (40 °F) or colder.

     • Observation(s): • NEW INFRACTION: Do not store coffee (or any foods) in the storage compartment as chemical cleaners. Separate the coffee and cleaner in the cabinet under the coffee island/counter.

   • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
     • Observation(s): • The sanitizer used for ware washing and for surfaces in food prep areas is not being dispensed at an adequate concentration from any of the chemical dispensers. At the time of inspection the sanitizer concentration being dispensed was was 0 - 100 ppm. The sanitizer must be maintained at 200 ppm. • Staff report that due to the sanitizer dispensers not working properly staff are mixing the sanitizer by hand, however, all spray bottle tested showed an inadequate concentration of sanitizer (0 - 100 ppm). Instruct all staff on how to properly mix and test the sanitizer, and how often to change the sanitizer in the spray bottles. • The sanitizer/chemical dispensers must be repaired, or replaced, immediately. This has been an ongoing issue in this facility., and as such, it is strongly recommended that the dispensers be replaced. • Sanitizer must be maintained at proper concentrations at all times.

      • Observation(s): a) At the time of inspection cases of raw and precooked frozen chicken were being stored in the bagged ice retail freezer. Chicken products are not to be stored in the bagged ice cooler (ice=a ready-to-eat food). Re-arrange the contents of the chicken freezers so that all chicken product can fit into the freezers intended for this product; if chicken products cannot fit into the existing freezer space then 7-Eleven must provide additional freezer unit(s). Correct right away.
      • F3.4J - Refrigeration equipment must be of the type or capacity to meet the needs of the premises.

    • 14 - Are the premises, equipment and utensils designed and maintained to ensure safe and sanitary food handling?
      • Observation(s): a) The walk-in cooler had a lighting intensity of 2 Lux at the far end. The lighting intensity of walk-in coolers should be maintained at a minimum of 110 Lux, as per the "Food Retail and Food Services Code" (Canada) and the "FDA Food Code" (US). The lighting intensity in the walk-in cooler must be increased; the wiring for a light appears to be already installed at the far end of the cooler but no fixture was attached. Correct by February 24, 2016. b) The fluorescent lights in the food prep room requires fixture covers. Correct by February 24, 2016 c) Bare electrical wires protruding from a switch box by the drink syrup racks in the back stock room should be properly covered/protected and resealed in the switch box. d) The ultraviolet light for the beverage water treatment system is not plugged into electrical source; is servicing required?
      • 14.1 - Premises must be provided with artificial lighting that is sufficient to permit sanitary operation and maintenance of the premises.
