    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Overall yes, however a few items to address: Ice machine is still leaking. Operator advised service to be conducted or possibly re-placed. *Ensure to keep surrounding floor dry until repaired or replaced. Cutting boards have been previously planed, however unfortunately the integrity of the boards are still not in good condition. *Ensure smaller cutting boards are placed on top until further planning is conducted or replacement. Ceiling vents in the kitchen have some dust accumulation. *Ensure to remove dust, clean and monitor on a regular basis.

      • Observation(s): Overall yes, however a few items to address: Ice machine leaking and has some scale build up inside- Operator has put in a service request for the leak. Ensure to remove scale and clean ice machine on a regular basis. Cutting boards have been previously planed, however unfortunately the integrity of the boards are still not in good condition. -Smaller cutting boards are placed on top for the time being. -Ensure to remove or discard and replace worn cutting boards in the near future.

      • Observation(s): Overall yes, however further cleaning within the kitchen is required. Food debris accumulation observed under equipment, coolers and frequently touched surfaces. -Ensure thorough and frequent cleaning is conducted and maintained. Cutting boards are becoming worn with deep grooves. Pathogens can harbor in these deep grooves and create potential for cross contamination. -Ensure to monitor cutting boards and when become too worn, discard and replace. In the mean time small cutting boards can be placed on top of larger cutting boards for food preparation.
