Two metal stainless steel bowls were observed black with soot, grease, and proper cleaning. The burger press was filthy. The probe thermometer was stored in filth and grease.

Retrain staff on safe thawing methods.

- 0 ppm quat sanitizer detected in the solutions in the kitchen, needs to be at minimum 200ppm.- Staff manually prepared 200 ppm quat sanitizer solutions as the automatic chemical dispenser was checked and found to be not working.

- The kitchen dishwasher rinse temperature was measured at 63C at the plate, needs to be at minimum 71C at the plate. The external wash and rinse gauges on the dishwasher are not moving and do not appear to be functional. - Staff were instructed to manually sanitize all dishware coming from the dishwasher. A 200 ppm quat sanitizer solution was prepared in one of the large sinks. The dishwasher technician was called for service.
